For our second big day of meal prep we had the fortune of extra helping hands and were able to accomplish a lot!
With an assembly line measuring out meals, labelling and vacuum sealing and a wonderful cook coming up with recipes and collecting feedback from everyone we were able to bring our total meal count up to over 300 servings. Just shy of our goal of 400, one last push and we’ll be good to go!
With the help of our friends we created a Mixed Veggie Couscous dish, Mujadara, a Wild Mushroom Polenta dish, doctored a Tortilla Soup mix and made up some more single serving cereals.
Mujadara
Prep Time : Up to a couple days
Cook Time : 10-15 minĀ
Difficulty : Very Easy
You Will Need
1/2 c Dehydrated Lentils
1/2 c Instant Rice
1/4 c French’s Crispy Fried Onions
1/4 tsp Turmeric
1/4 tsp Cinnamon
1/4 tsp All Spice
1 tsp Coriander
1 tsp Cumin
Bring 1 1/2 C water to a boil. Remove from heat and add Mujadara. Cover and let stand for 5 min or until lentils are rehydrated.
